What is the recommended system/hardware requirements that are needed for building a private blockchain for testing (including the network)? Also how many nodes will be needed?

Usually there are no requirements on hardware to use blockchain if you have typical desktop computer(Normal CPU, Network enabled, etc…). Of course, computation based blockchain systems such as Bitcoin that uses PoW as a consensus mechanism encourage participants to upgrade their computation hardware (more CPU/GPU or mining-specialized hardware such as ASIC). But it is not always required.

But in some protocols that depend on special hardware feature such as trusted execution environment, for example, Hyperledger/SawtoothLake, Microsoft cocoframework or Teechan, then you need Intel SGX-enabled CPU.
